Preheat your oven to 180°C (160°C for fan assisted ovens) / Gas Mark 4. Grease the tins or line with greaseproof paper.
Mix the eggs, oil, water and Velvety Vanilla Cake Mix gently together and whisk (by hand or electric mixer) for 2-3 minutes until smooth and creamy.
Pour the cake mixture evenly into your two greased cake tins.
Bake in the centre of the oven for 22- 27 minutes or until a rounded knife inserted into the centre of the cake comes out clean, then cool on a wire rack.
Mix pink food colouring paste into the Vanilla Icing to get the desired shade of pink.
Spread pink icing on 2 of the cakes, stack one on top of the other, and spread icing on the third cake. Then put the last cake on the top.
Cut the middle out of the cake using a sharp knife to make a space for the doll.
Wrap the doll in cling film up to under her arms and tie her hair back.
Place the doll into the cake and cut around the top cake in a diagonally downward direction to round off the top edge. Use the off cuts to build up the height of the dress around the doll. Stick on with a little icing.
Ice the whole of the cake with a thin layer of the pink icing.Don't worry if you get crumbs in the icing as we are just forming a crumb coat. We will then do a second layer of icing after it has set for a very smooth iced finish.
Place in the fridge to harden for 30 minutes. Then spread another layer of pink icing over the whole cake for perfectly smooth icing. This time use the back of a dessert spoon to make sweeping drape patterns in the icing. Don't forget to ice her body too!
Decorate her dress with sprinkles, star decorations to embellish the top and use sweets for the bottom. Don't forget to untie her hair!
