Are you time-poor, but need a healthy snack?

These are sure to hit the spot

Recently I was given a pot of the most deeelicious peanut butter

And although my favourite way to eat it is on toast for breakfast

I thought I'd use it to make some healthy biscuits

And here's what I came up with….

I based these biscuits on this recipe which is another one of my favourite quick and easy biscuit recipes….

These muesli biscuits are super fast to make and only require one bowl, meaning minimal washing up

My perfect style of cooking

Because they are so easy, you could get your kids to make them

And they would make a great healthy snack option to add to their lunch box

Feel free to vary as you like – see ideas at the bottom of the recipe

Super-Fast One-Bowl Muesli Biscuits

  • ¼ cup (60 grams) natural peanut butter
  • 2½ tablespoons (60 grams) honey or maple syrup
  • ½ cup (50 grams) whole rolled oats
  • ¼ cup (30 grams) walnuts, chopped
  • 1 tablespoon (15 grams) pumpkin seeds
  • 1 tablespoon (15 grams) sunflower seeds
  • 1 tablespoon (15 grams) ground linseeds
  • ½ teaspoon ground cinnamon or ginger or both, optional
  1. Heat oven to 170 degrees C
  2. Line a large baking tray with greaseproof paper and set aside
  3. Place all ingredients into a medium sized bowl and mix together until well combined
  4. If your honey and peanut butter are a bit stiff and hard to mix, place bowl over a saucepan of simmering water until warmed through and this should help
  5. Using a large teaspoon, spoon out blobs of mix onto your prepared oven tray
  6. Bake for 12 minutes
  7. Allow to cool before removing from tray
  8. Store in an air-tight glass jar

Notes:

Natural peanut butter means there is no oil, sugar or other undesirable ingredients added

Almond butter or any other 100% nut or seed butter can be used in place of peanut butter

For a nut free version, replace peanut butter with tahini and use a mix of pumpkin and sunflower seeds in place of the 1/4 cup of walnuts

For a vegan version use maple syrup or other liquid sweetener (agave, rice syrup etc) in place of honey

Quinoa flakes may be used in place of oats – but I haven't actually done this, so if you try this version, please let me know how it goes

LSA or ground chia seeds can be used in place of ground linseeds

Note – I like to buy whole linseeds and grind them myself. I always store them in the freezer to keep them as fresh as possible. They can be used directly from the freezer
